Roasted Vegetables

  • Bake in a glass 9×16 pan or similar size with aluminum foil cover
  • Cut to bit size pieces: potatoes (red/white/sweet), carrots, squash, broccoli
  • Pour over olive oil and spices (rosemary, thyme, salt/pepper, little garlic)
  • Stir/mix up and cover w/ aluminum foil. Cook @ 425? and check 20min, etc
